Pepper Brain Monsters (capiscum) are a favourite dish of Halloween Food Fun in my house and as soon as we head into October my girls start asking for them. They’re a great way to get some healthy fun into your kids over Halloween and older kids can help make them!
Something to bear in mind, is a lot of children don’t like the texture of cooked peppers. So the trick (and treat!) with these is ‘not to cook them’ and to use the sweet red, orange and yellow peppers.
Use your own Bolognaise (Bolognese) sauce and standard spaghetti or linguine. I have a vegetarian recipe here using quorn.
A word of warning these are very filling, so don’t be surprised if your children struggle to finish it. I don’t always manage a whole one myself … I rather like to join in with our Pepper Brain Monster chomping)!
Choose nice round fat peppers (capsicums depending where in the world you live) that will stand up
To start slice the top off the peppers and carefully pull out all the seeds and stalk.
Using a sharp knife cut some eyes and a mouth out of the pepper like you would with a pumpkin.
Hang the end of the pasta down inside the pepper and hang the rest of it down the outside and on to the plate. Don’t be tempted to use drop the centre of the spaghetti into the middle of the pepper as there won’t be enough room for the sauce and the hair ends up being short. Do this all around the pepper.
Carefully spoon in the space, piling it up like a brain at the top. The sauce should naturally drip out through the eyes and mouth which adds to the ghoulish look … Perfect Halloween Food Fun!
