Up until now my girls have always had School Dinners apart from Fridays, which is usually a fishy dish plus chips (I have children who aren’t that keen on chips).
So when they came home at the beginning of this term and said they really wanted more packed lunches I had to put my thinking cap on and come up with some ideas that were more than just a sandwich. It’s not that I mind them having the odd sandwich during the week but I want them to keep hold of their current food enjoyment and not get bored by the repetition that can happen with packed lunches.
Each week I’ll share one of our packed lunch ideas in an effort to document (for personal reference) what we pull together and hopefully provide a little inspiration for others.

This week they had, Smoked Salmon Pesto Pasta, a packet of popcorn, an apple, a cereal type bar, some dried mango and a bottle filled with tap water to go with it.
Smoked Salmon Pesto Pasta
Creme Fraiche (or soured cream)
Sweet cherry/piccolo tomatoes (cut into quarters)
Black pitted olives (cut into quarters or sliced into thirds)
I won’t talk quantities as it depends on how many your cooking for but you want to end up with a nice distribution of salmon, tomato and olive amongst the pasta. My girls like to have their pasta with a little warmth so I cook the pasta fresh in the morning and use a thermos type container to put the pasta in so it still has a little heat when they eat it at lunch time. If your super organised you can cut up the salmon, olives and tomatoes the night before. Use a pair of scissors to cut up the smoked salmon … it’s quicker.
1 . Cook your pasta and drain
2. Add your pesto sauce plus 1-2 tablespoons of creme fruit and gently stir until all the creme fruit is melted and the pesto evenly distributed.
3. Add your chopped tomatoes and olives and gently mix in
4. Finally add the salmon and gently mix so it’s evenly distributed.
