Rock cakes not only taste yummy but are a brilliant ‘First Cake Make’ for kids .
250g (8oz) self raising flour
90g (3oz) butter
90g (3oz) soft brown sugar
125g (4oz) raisens (you can also use currents, chocolate chips, sprinkles, dried, cranberries, dried blueberries etc)
1/2 tsp mixed spice
Aprons, weighing scales, large mixing bowl, small bowl to weigh with and pour from, baking tray.
1.) Add the flour and butter (Room temperature soft) to your bowl and rub between your fingers and thumbs until it looks like breadcrumbs.
4.) Add the egg to the dry ingredients and mix together until you get a nice soft dough.
