A few days ago I was chatting about the virtues of pitta pockets with the lovely Scottish_Mum and SunnivaAnne.
I’m a big fan of pitta breads. They are one of those wonderfully versatile foods that I’ve always got a store of in my freezer. They take a minute or two to defrost/warm up in the toaster and taste delicious with just butter meted inside. Great sliced into fingers for dipping in egg or soup
Pitta pockets are one of my lazy day tea foods. They take about 10 minutes to make without kiddy involvement (see end of blog!) which is great for busy school days. They’re handy for pulling together a quick playdate snack. And great when you’re running low on food or when you need to use some left overs.
You will need:
Cucumber, tomatoes, sausages (veggie or meaty), mayonnaise and of course pitta bread (brown or white).
1. Fry or bake your sausages and whilst they are cooking chop up some cucumber and tomatoes. When the sausages are cooked chop them into bite sized pieces as well.
2. Mix the chopped cucumber, tomato and sausages with a little mayonaise.
3. Warm the Pitta breads in a toaster. Be careful not to over cook them and let them go crispy. You want the bread to be warm but soft.Cut them in half, open them up with a knife and spread a little butter on the inside.
4. Fill with sausage and salad mix
You can easily involve the kids in making these as well. Older kids can practice their knife skills chopping everything up into bite sized pieces and younger children get pleasure mixing it all together or just filling the pockets up.
